王 晨

 

王晨,男,博士,副教授硕士生导师。近5年在Trends in Food Science & TechnologyCritical Reviews in Food Science and NutritionJournal of Advanced ResearchFood ChemistryFood Chemistry-XFood Science and Human WellnessMicrobial BiotechnologyFood & Function国内外高水平期刊发表论文30余篇,其中IF>10论文4,高引论文、热点论文和封面论文各1篇。申请专利6项,目前授权5项。具有10年以上微生物相关研究经验,熟练掌握环境微生物(酵母菌、细菌、霉菌等)、发酵食品微生物以及肠道微生物(乳杆菌、双歧杆菌、拟杆菌以及阿克曼菌等)的靶向筛选和培养技术,完成了100余株肠道微生物基因图谱的测序。

技术服务:

  1. 2022-2023,重庆市永川区优秀科技特派员,协助重庆永川豆豉食品有限公司完成永川豆豉制曲关键菌种—总状毛霉全基因组精细图绘制,选育了更抗高温的总状毛霉C菌株,增加了传统毛霉型豆豉专用发酵菌株资源。

  2. 2023-2025,服务于艾地盟(上海)管理有限公司,进行增加发酵大豆产品鲜味的优质乳酸菌筛选工作。
