简介:A Professor Emeritus of Food Science in the Department of Food Science at Cornell University; An Adjunct Professor in the Department of Population Medicine and Diagnostic Sciences in the College of Veterinary Medicine at Cornell University; An Adjunct Professor of Food Science at Kansas State University; Head of the Cornell Kosher and Halal Food Initiative; A member of the American Chemical Society (ACS), the Atlantic Fisheries Technological Conference (executive secretary), the American Meat Science Association, the IFT (Executive Committee,1993-1996), the Poultry Science Association, and the Association of Orthodox Jewish Scientists; A member of the Food Marketing Institute (FMI) and the National Council of Chain Restaurants’ Animal Welfare Committee; A member of the American Veterinary Medicine Association’s first Humane Slaughter Panel; Co-editor of Food Bioscience.
近期研究:flesh foods, particularly fish and poultry; shelf-life extension of fresh and frozen fish; product development with underutilized fish; by-product recovery from poultry and fish processing wastes; animal welfare, particularly with respect to issue of kosher and halal slaughter of food animals.
