B. RESEARCH INTERESTS

Professor Guohua Zhao is working with the following fields: 1) Chemistry and Nutrition of non-digestible carbohydrates, with emphasis on extraction, structural characterization, modification, biological activity evaluation, related product design and industrialization of bioactive polysaccharides, dietary fiber and oligosaccharide; 2) Rapid analysis techniques for food quality and safety.
